They worked in several laboratories to show the antioxidant properties and capacities of caramels. Caramel, produced by controlled heating of sugars with or without the presence of caramelization promoters, provides a wide range of ingredients. A family-run business, Nigay is specialized in the production of caramels used in many forms (liquid, paste, powder, pieces) by artisans and food industries.
