Display of culinary finesse by titans

As a world-renowned pastry chef René Frank insists he has a responsibility to change the perception that a good desert must be high in sugar. Frank, head chef and co-owner of CODA, in Berlin, Germany, the world’s first dessert restaurant to receive a Michelin Star, is one of 60 titans of the culinary universe taking showcasing their skills and delivering valuable insights at Gulfood 2021, the most competitive global F&B sourcing event, which runs at Dubai World Trade Centre (DWTC) until Thursday 25 February.

Taking to the stage at the popular Tastes of the World, an immersive experience featuring celebrity chefs from around the world, Frank, a 2 Michelin Star chef, demonstrated his award-winning approach to cuisine with a session titled ‘Creative Cuisine: Desert Revolution: A new vision of the 2 Michelin Star Pastry Chef, Rene Frank’.

“I’m from Germany and as Germans, we consume a lot of sugar. We rank second after the United States as the country with the highest sugar consumption. I run CODA, a dessert restaurant, and I believe it is a chef’s responsibility to help people change their perception of desserts having high sugar content and help manage the guest’s sugar consumption,” he said. “Gulfood is the perfect platform to show people how to enjoy desserts while sticking to a healthier lifestyle.”
